     Why should I buy raw honey locally instead of commercially processed honey from the store? For one thing raw honey is more nutritious. It contains a wide variety of nutrients including amino acids, mineral, vitamins, and enzymes. Beyond these impressive components, raw honey contains nearly 30 types of bioactive plant compounds, which act as antioxidants. Antioxidants have impressive health benefits, including reduced inflammation, and a lower risk of heart disease and certain cancers. Commercial honeys have a reduced benefit however because the processing methods destroy much of the good stuff. Raw honey has been proven to contain up to 4 times the amount of antioxidants as commercially processed honey.
     Another component of raw honey that is almost entirely lost to processing is residual bee pollen. This is an unfortunate loss because bee pollen contains vitamins, amino acids, essential fatty acids, micronutrients, and antioxidants--earning it recognition as a medicine by the German Federal Ministry of Health! And while the bee pollen is removed, many are concerned that artificial sweeteners like high fructose corn syrup are being added to commercial honeys simply to more easily meet demand.
     Local raw honey delights the senses with an insane taste explosion and provides a bounty of nutrients. Quite simply, raw honey is liquid gold.
